Over the last couple of years we have enjoyed being able to gift gently used products to our local schools, daycares, and art teachers. It's been well received and we want to expand the program to other teachers and caregivers. Cookies (for breakfast)

We decided to take some inspiration from the upcoming Easter holiday and cook with a somewhat unconventional baking ingredients - CARROTS. 

Carrots can be very polarizing. Some have bad childhood memories of mushy cooked carrots on their dinner plate, while others have grown to love the crisp crunch of a baby carrot as a lunchtime snack. What most people might not realize about carrots is that they are very sweet, which make them a tasty but also healthy ingredient to bake with. 

We found this healthy breakfast cookie recipe from A Couple Cooks. The original recipe is by Katheryn Taylor, who published it in her cookbook Love Real Food. 

The cookies are vegan and great as a portable breakfast, snack or a wholesome dessert. They taste salty, sweet and have a great texture. You can also pack them with tons of fiber by adding a couple tablespoons of  flax or make them gluten free by swapping whole wheat flour for almond flour.

For the skeptics out there, try them! This recipe might just change your mind about carrots.


INGredients and tools

​1 cup quick-cooking oats
1 cup white whole wheat flour or regular whole wheat flour (use almond flour to make this recipe gluten-free) 
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon fine sea salt
1/4 teaspoon ground ginger
1 1/2 cups peeled grated carrots (about 1/2 pound)
1 cup roughly chopped raw pecans or walnuts
1/4 cup golden raisins
1/2 cup maple syrup
1/2 cup melted refined coconut oil

1. Preheat the oven to 375F
​
​2. In a bowl, combine dry ingredients; oats, flour, baking powder, cinnamon, salt, and ginger. Whisk together and then add carrots, pecans, and raisins. Stir to combine.

3. Measure out a few spoonfuls of coconut oil and add to a measuring cup. Microwave the coconut oil to melt then combine the maple syrup with the melted coconut oil.

4. Pour the liquid mixture into the dry mixture and stir until just combined. The mixture will be wet and have a lot of texture.

5. Take 1/4-cup scoops of dough and roll into a golf ball sized cookie. Place in the baking cups. Cookie size can vary depending on your preferred serving size.

6. Place baking cups in the oven and bake until the cookies are golden and hold together, 15 to 17 minutes. Cool the cookies on a cooling rack for 10 minutes.

How To Make Hot Chocolate Bombs

​Ever since they started trending we’ve been curious if we could use our silicone baking cups as silicone molds and to make hot cocoa bombs. We spent last Saturday testing our hot cocoa bombs recipe and can’t wait to share our best tips for making cute and festive bombs to share with family or friends. Hope you enjoy!

Ingredients and tools

Melting chocolate  
Hot cocoa mix
Sprinkles or decoration of your choice (you can use crushed
up oreos, candy canes, ​graham crackers, whatever you like!)

1. Melt the chocolate according to instructions on the packet until you get a smooth, spreadable chocolate (we microwaved on defrost for 3 minutes, then 30 second intervals).

2. With a spoon, scoop some of the melted chocolate into the hot cocoa bomb molds (our regular size baking cups). Make sure that there is a relatively thick coating of chocolate on the sides and bottom, this will help the chocolate bomb to not break as easily when taking it out of the silicone mold.  ​

​3. Place the chocolate bomb mold now filled with chocolate into the freezer and let set for 20 minutes. Be patient! The longer the chocolate is in the freezer, the better it will set.

​4. Once the chocolate is set, take the chocolate bomb molds out of the freezer. Place the mold upside down on the baking mat. Slowly and carefully start to roll the edges of the silicone mold up upwards until you have released the sides of the mold from the chocolate. Once you’ve rolled the sides all the way up, the sides should be facing ‘inside out’. Then, carefully peel off the bottom of the mold from the chocolate. 

This is the hardest part of the whole process! We tried a couple of different methods to release the chocolate from the silicone mold and this one worked best. Don’t get discouraged if you break some! Trust us, we had to toss a bunch of failures...

5. Put the set hot cocoa bombs now released from the molds back in the freezer while you work on the tops.

6. For the tops, we decided to use a flat piece of chocolate. Spread a layer of melted chocolate on the baking mat and use a knife to cut it in small squares, at least big enough to cover the hot chocolate bombs. 

7. Place the baking mat in the freezer and let set for 20 minutes.
 
8. Once set, carefully pull the blocks of chocolate off the baking mat.

I9. Now it’s time to assemble the hot chocolate bombs by attaching the tops to the bombs. We recommend setting up the tops, chocolate bombs and open hot cocoa packets close to one another so you can assemble quickly. To assemble, heat up a plate in the microwave or a non-stick skillet on the stove. Take the set hot chocolate bomb out of the fridge and rub the open edge on the warmed plate or skillet so that the chocolate starts to melt. Once it is melted a bit, take the hot chocolate bomb off the plate or skillet and quickly fill with cocoa. Then, place the flat top on the hot chocolate bomb to seal. The raw edges can be cut away with a knife, or rubbed on the hot plate or skillet until melted away. 

10. Once you’ve assembled all the hot cocoa bombs, you can decorate! We melted white chocolate and added festive Valentine’s sprinkles. 

It was quite literally a labor of love, but they turned out really well! We bought some confetti and gift bags from Michael's and wrapped them up to give to loved ones for the holiday. Everyone was very impressed!

Fun Flavored Popcorn Recipes to Inspire Your Next Healthy Snack

Not sure about you but we’re about at that point in the year where we’re starting to lose steam on our New Year’s Resolution to eat healthier.

Popcorn has always been one of our go-to healthy snacks; guilt-free and easy to make perfectly in our silicone popcorn maker. 

Recently we’ve been experimenting with different oils and seasonings and wanted to share a few of our favorites! 

For the purists

Movie Theater Style Butter 
                            
Ingredients:
½ cup popcorn kernels
2 Tbsp butter, shaved 
Salt, to taste

Add popcorn kernels to popcorn maker. Sprinkle shaved butter on top of kernels. Place silicone lid loosely inside bowl. Microwave 2-4 minutes, until popping slows. Carefully remove bowl and remove lid. Sprinkle with salt.

Healthier But Still Buttery Canola Oil 

Ingredients:
½ cup popcorn kernels
2 Tbsp canola oil
Salt, to taste

Add popcorn kernels to popcorn maker. Pour canola oil on top of kernels.
Place silicone lid loosely inside bowl. Microwave 2-4 minutes, until popping slows.
​Carefully remove bowl and remove lid. Sprinkle with salt.
​


Cleaner Coconut Oil 

Ingredients:
½ cup popcorn kernels
2 Tbsp coconut oil
Salt, to taste

Melt coconut oil (microwave for around 2 minutes). Add popcorn kernels to popcorn maker. Pour coconut oil on top of kernels. Place silicone lid loosely inside bowl. Microwave 2-4 minutes, until popping slows. Carefully remove bowl and remove lid. Sprinkle with salt.

​Feeling Fancy Truffle Oil

Ingredients:
½ cup popcorn kernels
2 Tbsp truffle oil
Salt, to taste

Add popcorn kernels to popcorn maker. Pour truffle oil on top of kernels. Place silicone lid loosely inside bowl. Microwave 2-4 minutes, until popping slows. Carefully remove bowl and remove lid. Sprinkle with salt.

Lunchtime Dill Pickle Seasoning

Ingredients:
½ cup popcorn kernels
2 Tbsp canola oil
1 Tbsp dill pickle seasoning

Add popcorn kernels to popcorn maker. Pour canola oil on top of kernels.
Place silicone lid loosely inside bowl. Microwave 2-4 minutes, until popping slows.
Carefully remove bowl and remove lid. Sprinkle with salt and dill pickle seasoning.

Gameday Ranch Seasoning and Hot Sauce  

Ingredients:
½ cup popcorn kernels
2 Tbsp canola oil
2 Tbsp ranch seasoning
Hot sauce, to taste
Salt, to taste

Add popcorn kernels to popcorn maker. Pour canola oil on top of kernels. Place silicone lid loosely inside bowl. Microwave 2-4 minutes, until popping slows. Carefully remove bowl and remove lid. Sprinkle with salt and ranch seasoning. Add hot sauce.
