Recipe: Air Fryer Avocado Egg Rolls

You had me at guacamole in an egg roll. What's not to love about fresh avocado, onion and cilantro in an easy to make air fryer appetizer? Let us also not forget the sweet chili mayo dipping sauce, delicious. When I tried this recipe, I first tried it with spring rolls since that is what I had on hand, but I think the egg roll would give a little more crunch and all-around flavor.

Ingredients for air fryer avocado egg rolls

Ingredients

Makes approximately 10 egg rolls
  • 3 medium Hass avocados, cubed
  • 1-2 small limes, juiced
  • 1/4 sundried tomatoes packed in oil, drained and chopped
  • 2/3 cup red onion, diced
  • 1/3 cup cilantro, chopped
  • 1 teaspoon salt
  • freshly ground black pepper, to taste
  • 10 egg roll wrappers

Sauce:

  • 2 tablespoons mayonnaise
  • 1 tablespoon sweet chili sauce
  • Sriracha, to taste

Instructions

  1. Preheat air fryer to 400°F 
  2. Combine avocado, lime juice, sundried tomatoes, onion, cilantro, sale and pepper
  3. Place egg roll wrappers on a clean surface, spoon 1/4 cup mixture onto the bottom third of each wrapper
  4. Dip your finger into a small bowl of water and wipe it along the edges of the wrapper
  5. Fold the wrapper corners to the center and roll into a cylinder
  6. Spray all sides of the egg rolls with oil
  7. Place egg rolls in air fryer liner and place in the air fryer, cook for 6 minutes, rotating halfway through
  8. While egg rolls cook, combine mayonnaise, sweet chili sauce, and sriracha and serve on the side for dipping
