Recipe: Wonton Spinach Artichoke Bites

I needed a quick Super Bowl app, and these wonton spinach artichoke bites were definitely it. You get the fan-favorite spinach artichoke dip with a wonton delivery vehicle, really elevates the app with very minimal effort. I'm not going to lie, I pressed the easy button and actually used store-bought (la terra fina spinach artichoke & parmesan) spinach artichoke dip for the filling in my case, but I have a great recipe below.

Ingredients

Makes approximately 12 wontons
  • 12 wonton wrappers
  • 5 oz package frozen spinach, thawed and well strained
  • 8 oz artichoke hearts, drained and finely chopped
  • 1/3 cup mayonnaise
  • 1/4 cup sour cream
  • 2 oz cream cheese, room temperature
  • 1/2 cup grated parmesan cheese
  • 2 cloves garlic, minced

Instructions

  1. Preheat oven to 350°F (325°F if convection) and prepare a baking sheet with silicone baking mats and silicone baking cups
  2. Arrange wonton wrappers in the silicone baking cups, then spray lightly with cooking spray
  3. Bake wonton cups for 5 minutes, then remove them from the oven and set them aside
  4. In a medium bowl, stir together artichoke hearts, spinach, mayonnaise, sour cream, cream cheese, parmesan cheese, and garlic
  5. Divide filling evenly into wonton cups and bake for 10-12 minutes until the mixture is warm and the wonton cups are golden brown
